The Classic Italian Beef Sandwiches recipe is a go-to family recipe handed down to me by my grandmother. This is the version that the family has made since the late '30s. This classic Italian beef sandwich comprises juicy shredded roast beef, fried sweet bell peppers, a spicy giardiniera, and provolone on a crusty bread roll.

I have to tell you to be prepared to have napkins ready this juicy Classic Italian Beef Sandwich can be a little messy– and eating it with a fork and knife is almost forbidden to think about doing. So grab those napkins and lean over the counter because this sandwich is entirely worth the mess you're going to make.

Classic Italian Beef SandwichesUsually, this recipe would have taken me almost 7 hours to make in an oven set at 275 Degrees. I have done that in the past as per my grandmother's specific instructions. However, lucky for us, they invented the electric pressure cooker, and we can cut that cooking time down to about a little over 60 minutes. The Italian Beef still tastes like perfection.

Besides using an electric pressure cooking and adding provolone cheese, I have not modified the family recipe. I will admit it I am a total cheese freak, so I added provolone to the crusty bread and put it in the oven to melt before adding the Italian Beef, Fried peppers spicy giardiniera. It brings the Italian Beef Sandwich up a notch, but it is optional.

Italian BeefI use a canned Homemade Spicy Giardiniera recipe and another for a milder version due to the children or family members that do not like hot Giardiniera. You do not have to go to all that trouble. You can find Spicy Giardiniera at the local market. It would be best if you looked for Spicy Chicago-Style Giardiniera in the condiment aisle. They also sell a mild version of  Giardiniera if you do not like hot spicy foods. In the future, I will post a recipe for both if you would like to learn how to make your own. It's pretty simple to make.

  • Chuck roast
  • Dried Oregano
  • Dried Basil
  • Onion powder
  • Crushed red pepper
  • Freshly ground nutmeg
  • Dried thyme
  • Kosher salt
  • White Pepper
  • Oil to sear chuck roast
  • Low sodium beef broth
  • Fresh Garlic minced
  • Freshly chopped parsley
  • Hard-crusted Italian deli rolls
  • Green bell pepper
  • Red bell pepper
  • Extra-virgin organic olive oil
  • Spicy giardiniera
  • Provolone cheese *optional

The method used for Classic Italian Beef Sandwiches

  1. Prepare seasoning by mixing all of the dry seasonings and herbs in a small bowl. Prepare the minced garlic and chopped parsley using a food chopper to mince the fresh Garlic and chop the fresh parsley.
  2. Place the uncooked chuck roast on a cutting board or platter, then sprinkle with dry seasoning ingredients evenly on both sides.
  3. Place the seasoned chuck roast in the electric pressure cooker and use the sear/browning setting to sear both sides of the meat. It will take about five minutes to come to proper heat once it does sear for about 10 minutes on each side.
  4. Once done, searing add the chopped parsley, minced garlic on top of the meat, add the beef broth. Cover with lid and lock the lid. Select the meat setting and set high pressure for about 60 minutes (for a 5pound roast). If the chuck roast is smaller, adjust the timer to the owner's manual. If you have an Instapot, the setting may be a different setting. Please refer to your owner's manual for the sear and meat settings.
  5. Once finished cooking, do a natural release for 10 minutes, then a quick release until the float valve goes down.
  6. Wash the green bell peppers and slice, removing seeds and stem. Fry them in olive oil until softened.
  7. Optional step place two slices of provolone on each bread roll and place in a 400-degree oven just until the cheese melts, and then proceed to step 8
  8. After cooking, remove the chuck roast and break the meat apart with a fork—pile on crusty Italian deli rolls or Italian bread and top with the fried peppers and  Spicy giardiniera.

Tips and Tricks

  1. If you do not have an electric pressure cooker, this may also be cooked at 275 degrees for 7 hours in an oven. Be sure to tightly cover the roasting pan and check the liquids have not evaporated. Keep extra broth on hand to add to the roast. It should come up the sides of the roast about 3/4 of the way.
  2. This Italian Beef can also be made using a Crockpot. It takes about 8 hours in a Crockpot. Be sure to check on the liquids, and if need be, add warm broth to it. Do not add cold broth as it may crack your crock.
  3. Be sure to use quality olive oil. I use organic cold-pressed. Do not sub with other oils.
  4. You can find both the Spicy Chicago-Style Giardiniera and the Mild Giardinierain condiment sections at the most popular markets and stores. If you cannot locate it, all Italian Specialty Markets and most International Markets will carry it.
  5. Be sure to use a quality Italian Sandwich roll; not all rolls are created equal. Hot dog buns are out of the question. If you can not find Italian Sandwich rolls, use crusty Italian bread.
